Masala Chicken Curry


My hubby espcially loves this dish. He can eat 2 bowls of rice with the gravy alone.

Steamed Ribs with Fermented Black Beans

I used Lee Kum Kee garlic black beans instead of fermented black beans, taste equally nice.

Ingredients:
500g pork ribs or pork slices
20g minced ginger
2 tsp minced garlic
2 chillies (chopped)
2 tbsp fermented black beans (dou jiang)
1 stalk spring onion (chopped)

Marinade:
1 tbsp light soya sauce
a little sugar, salt
a little wine, pepper
1 tbsp potato starch
2-3 drops meat tenderizer

Seasoning:
2 tsp oyster sauce
1 tsp sugar
a little vinegar
a little sesame oil, wine

Method:
1) wash pork ribs. marinate pork ribs for about 30 mins.
2) heat oil and fry ginger, garlice, some chilli and fermented black beans till fragrant.
3) add seasonings and stir well. add to the pork ribs and mix well.
4) transfer into the steamer and steam over high heat for about 20 mins.
5) remove and scatter spring onion and chilli on top. Serve.

Hot & Spicy Chicken Dices with Cashew Nuts


Ingredients:
400g chicken breast
1/2 green capsicum
1/2 red capsicum
1/2 cup cashew nuts
1 onion
8 dried chilli
2 stalks spring onion
4 petals garlic
6 slices young ginger
2 tbsp cooking wine (hua diao wine)

Seasoning:
1 tbsp oyster sauce
2 tbsp dark soy sauce
1 tsp sesame oil
1 tbsp sugar
2 tbsp chilli sauce
2 tbsp tomato sauce
2 tbsp zhenjiang black vinegar

Marinade:
1 tsp salt
1 tsp sesame oil
1/2 tsp pepper
1 tbsp tapioca flour
1 tbsp cooking wine (hua diao wine)

Method:
1) rinse chicken breast, remove to drain and cut into dices, add in marinade and set aside for 30 mins.
2) peel onion, cut into pieces, cut dried chilli into 2 sections, cut spring onion into small sections.
peel garlic and cut into slices. cut red and green capsicum into cubes
3) heat up oil in pot, fry chicken until well cooked, remove to drain.
4) heat up 2 tbsp of oil in pot, fry ginger, garlic and dried chilli over low heat, fry onion, seasonings and chicken breast.
5) dress with some cooking wine, and fry till fragrant.
6) add in capsicum and spring onion, fry over high heat.
7) add in cashew nuts.Serve

Steamed Chicken with mushroom & chinese sausage



Ingredients:
2 (300g) chicken drumsticks
2 chinese sausage
6 dried chinese mushrooms
2 stalks spring onion
6 petals garlic
6 slices young ginger

Marinade:
1/2 tsp salt
1 tsp sugar
1 tbsp light soya sauce
2 tbsp dark soya sauce
2 tbsp oyster sauce
1 tsp sesame oil
2 tbsp cooking oil (optional)
2 tbsp tapioca flour
pepper to taste

Method:
1) Rinse chicken drumsticks, remove to drain and cut into small pieces,
2) peel chinese sausage and cut into slices
3) soak dried chinese mushroom till soft, remove its pedicel and cut into half
4) cut spring onion into sections, peel garlic and smash it
5) blend chicken pieces, chinese sausage, dried chinese mushroom, spring onion, garlic, ginger with marinade, set aside for 1 hour
6) then spread it on evaporating dish and steam over high heat for 15 mins.
7) garnish with corainder leaves. Serve

Beef Bolognese Pasta




Ingredients:
1 pack Fusilli (any pasta of your choice)
2 carrots, diced
some oyster mushroom, sliced
1 tbsp olive oil
1 large onion, chopped
1 Ib ground beef
3 cloves garlic, crushed
14oz tomatoes (i used one can of mashed tomatoes)
few dashes of worcesterschire sauce
some dried oregano
some red chilli powder
black pepper to taste
salt to taste

Method:
1) Heat pan with some olive oil, saute the onions and carrots until they are partially tender.
2) add in meat, mushrooms, garlic & worcesterschire sauce, then fry till beef is slightly brown followed by the tomatoes.
3) add the rest of the ingredients & allow gravy to simmer on low heat.
4) while gravy is simmering, start boiling water & cook the pasta according to instructions on the package.
5) when pasta is cooked, add in the sauce and serve.

Hayden & Jaivyn in Summer

Yay, Summer is here. Sunshine, sunshine & more sunshine.
no more thick clothings & no more enduring in the coldness.
People seems to look more cheerful everywhere.
Brought our 2 babies out for a walk.

Myanmar New Year 2009

Time flies ! We are celebrating Myanmar New Year again.
seems not too long ago that they are celebrating it only.
This time is slightly different from the previous 2 years, no stage performance & not indoor.
They held an outdoor event at a park and the park is only 10mins train ride from my place.(Heng!) some people got to travel more than an hour to reach the place.
We had barbercue and some stalls selling Myanmar food and the event end with Lucky Draw.
as usual no Luck for the draw for me.

Forgotten to bring my camera along, so did not have much photos to post up.

My day with 2 babies

Been quite a while since my last update.
Have been rather busy looking after my 2 kids. Time are fully utilised.
Everyday is not enough time for me ( to catch up with the hongkong series)
Wake up, make breakfast, change diapers, feed baby, cook Jaivyn's meal, feed Jaivyn, bathing them, cook dinner, feed Jaivyn again, and after feeding Jaivyn will be almost 8pm and Soe will be back.
Dinner will be around 8.45pm, after that wash up and almost time to bed.
See, one whole day is gone just like tat.
not much spare time for me, that explain why I can't update my blog so often.
Anyway, here is the update pics of my boy Hayden.
He's now 2.5 mths old, can't wait for him to grow faster.

My lil Hayden

This is my lovely lil Hayden Khin.
He was born on 1 Jan 2009 at 13.18 hrs.
He weighs 3,510grams and is 53cm long.
Look at him, sleeping so soundly in his bed.

New Year Eve 2008

The day before Hayden was born.
went for an Eve Buffet dinner at Shang ri la's restuarant with bunch of Hubby's friends.
lots of variety there and its not expensive, 13.80 euros per pax.
eating to my heart's contents before going for delivery (unexpected due)

After dinner, some went to the river side to play with the fire works.
Me and hubby did not join, went straight back home for the countdown.
